Can I order individual dishes instead of a full menu?

No. The house has no carta: the kitchen serves tasting menus only, in the four versions listed above. Each guest chooses one of them.

Can the Gastrobotánica menu be served vegan or vegetarian?

No. Gastrobotánica is the omnivorous line, with meat, fish and shellfish, and it is not adapted under any circumstances. The menu that can be served 100 % vegan or vegetarian is Vegetalia.

How do I request the vegan or vegetarian version of Vegetalia?

It has to be asked for at the time of booking, not on arrival. Say so when you reserve your table and the kitchen prepares the menu accordingly.

Where are these tasting menus served?

There is no carta here. The kitchen works with tasting menus only, and the whole offer fits into four names: Vegetalia, Vegetalia Experience, Gastrobotánica and Gastrobotánica Experience. Every price is quoted per diner, so what you read is what each person pays for the menu itself. The two lines are not two lengths of the same idea: they follow different philosophies, and choosing between them is the one decision worth making before you sit down at Ponzano 85, in the Madrid district of Chamberí.

Vegetalia is the vegetable line, at 158 € per diner, with Vegetalia Experience at 218 € per diner. This is where the plant world carries the menu from the first plate to the last, and it is the line that admits a dietary version: it can be served 100 % vegan or 100 % vegetarian when that is requested at the time of booking, not once the service has started. Guests travelling to Madrid on a strict plant-based diet should read that sentence twice, because it is the route the house offers and the request has to arrive with the reservation.

Gastrobotánica, at 168 € per diner, and Gastrobotánica Experience, at 228 € per diner, form the omnivorous line: meat, fish and shellfish appear alongside the vegetable work that gives the house its name. This line is not adapted under any circumstances. If someone at your table eats no animal produce, the menu to ask about is Vegetalia; there is no vegan version of Gastrobotánica and none can be improvised in the dining room. We would rather say that clearly on a web page than explain it to a guest who has already travelled to Madrid for the evening.

Gastrobotánica is also the name of the discipline Rodrigo de la Calle created, and he is the author of everything served in the dining room, both lines included. That authorship is why the format stays closed. It is served fully vegan or vegetarian when you ask for it at the moment of booking, which is the one detail worth getting right before you arrive. Vegetalia Experience follows the same idea at greater length, at 218 € per diner. What the two lines mean when you are choosing for a table of four

Most groups arrive with mixed diets, and the honest answer is that the two lines are not interchangeable. A table can combine both, with each diner on the menu that suits them, but a diner on Gastrobotánica will be served meat, fish and shellfish, and a diner who needs a fully plant-based meal belongs on Vegetalia with the request made at the time of booking. Prices are always per diner, so a mixed table simply pays for each menu chosen.

El Invernadero works exclusively with tasting menus. There is no separate list of dishes to order from, and no possibility of assembling a meal plate by plate. That is a deliberate decision about how the kitchen builds a sequence: the order of the courses, the progression of intensity and the point at which a dish makes sense are part of the composition. Choosing a menu is choosing the whole arc.

What that changes for a visitor planning an evening in Madrid

If you are used to scanning a menu at the table and deciding then, the decision here happens earlier. You pick your line and its length when you book, and you tell the house at that moment about any dietary requirement on the Vegetalia side. Diners who need a fully vegan or vegetarian meal cannot resolve it once seated, which is why the request belongs in the reservation. Each line exists in two lengths.
