    Dinner is available Tuesday to Saturday and on public holidays, at 19:00 or 21:30. Lunch exists only on Saturdays and public holidays, at 14:00. Weekday midday is not an option under this name.

    Vegetalia and Vegetalia Experience are our vegetable cuisine. Gastrobotánica and Gastrobotánica Experience are omnivorous, with meat, fish and shellfish. Prices run from 158 € to 228 € per diner depending on the line.

  3. 3. Add the vegan or vegetarian request

    Only Vegetalia is served 100 % vegan or vegetarian, and only when the request is made at this stage. Write it into the booking notes, together with any allergy or intolerance we need to know about.

  4. 4. Confirm and arrive with the full party

    CoverManager sends the confirmation with the sitting and the number of diners. Since the sequence starts for everyone at the same time, we ask that the whole party is present at the hour booked.

Common situations we sort out before you book

    One vegan diner, one omnivorous diner

    This works, but not by adapting a single menu. The vegan diner takes Vegetalia with the request noted at booking, and the omnivorous diner takes Gastrobotánica as it is written. Tell us in the reservation and we will set the table accordingly.

    A midday reservation on a Wednesday

    Not possible here. From Tuesday to Friday at midday the same address operates as Barbecho Bar, a separate project with its own menu and its own booking. For El Invernadero, choose an evening sitting instead.

    A Saturday with a full evening programme

    Saturdays and public holidays are the only days we open for lunch, at 14:00. It is the slot travellers use when the night is already taken by another plan in the city.

Dinner works in two fixed sittings, 19:00 and 21:30, from Tuesday to Saturday and on public holidays. The times are fixed because the whole room follows the same sequence: a menu of this length is plated in order for every table, and a late arrival cannot simply be slotted in halfway through. If you are travelling from another time zone and land on the day of your reservation, the earlier sitting is usually the safer choice.

The most important thing you can tell us is which line you want. Vegetalia is our vegetable cuisine, and it is served 100 % vegan or vegetarian when that is requested at the moment of booking. Gastrobotánica is omnivorous, built around meat, fish and shellfish, and it is not adapted under any circumstances. The request has to travel with the booking rather than be raised once you are seated: produce is ordered and prepared ahead of the service, not improvised during it. The same applies to allergies and intolerances, which we would rather read on the reservation than hear at the table. If your party mixes vegan and omnivorous diners, write it in the booking notes or send us an email and we will confirm what is possible for that date.

There is one operational detail that catches visitors out. From Tuesday to Friday at midday, Calle de Ponzano 85 is Barbecho Bar, a different project of ours with its own menu and its own booking channel. El Invernadero does not serve weekday lunches, so a Wednesday or Thursday midday reservation here is not possible: those days, plan for the evening. Weekend travellers have the extra option of lunch at 14:00 on Saturdays and public holidays.

The week is narrower than most visitors expect, and choosing the wrong day is the commonest reason a booking attempt fails.

Two dinner seatings: 19:00 and 21:30

Dinner runs from Tuesday to Saturday and on public holidays, in two seatings, at 19:00 and at 21:30. Both are complete services with the same tasting menus; there is no carta, only tasting menus. Travellers arriving from another time zone often prefer the earlier seating, while the 21:30 sitting follows the Spanish habit of dining late.

Lunch on Saturdays and public holidays at 14:00

The only daytime service under the El Invernadero name is lunch on Saturdays and public holidays, at 14:00. It is a single seating, and it is the option to look for when a weekend in Madrid is already committed to museums or a flight home in the evening.

Weekday lunchtimes: the room becomes Barbecho Bar

From Tuesday to Friday at midday, the same premises operate as Barbecho Bar, a separate project of the house with its own menu and its own reservations. It is not a lunchtime version of El Invernadero, and the two cannot be booked through the same channel. If you searched for us and found a midday table available at Ponzano 85, check which name it belongs to before confirming: El Invernadero does not serve weekday lunches.

Requesting the vegan or vegetarian Vegetalia at the moment of booking

This is the single instruction that matters most when you reserve, and the only moment at which it can be given.

How to ask for the 100 % vegan or vegetarian service

Vegetalia, the vegetable line of the house priced at 158 € per diner, is served 100 % vegan or vegetarian when it is requested at the time of booking. State it in the notes field of the CoverManager form, or send it to reservas@elinvernaderorestaurante.com quoting the reservation name and date. Specify vegan or vegetarian, and say how many diners at the table it applies to. Kitchens working to a fixed tasting format cannot improvise this once service has started, which is why the request belongs to the reservation and not to the table.

Why Gastrobotánica cannot be adapted

Gastrobotánica is an omnivorous tasting menu, with meat, fish and shellfish, and it is not adapted to a vegan or vegetarian version under any circumstance. Anyone booking for a mixed table should keep this in mind: the vegetable diner takes Vegetalia with the request made in advance, and the rest of the table may take either line. Getting this right at the reservation stage avoids the awkward situation of a guest sitting down to a menu that was never designed for them.

Planning a table around a trip to Madrid
